First Visit?
Ethiopian and Eritrean meals are made for sharing. Here is what to expect at the table.
Injera is a soft, slightly sour flatbread traditionally made from teff. Dishes are served on top of it, with extra rolls on the side.
Tear off a piece of injera and use it to scoop up the food. Cutlery is never wrong, though.
Order a few dishes for the table. Offering a friend a bite by hand, called gursha, is a sign of warmth.
Many Ethiopians and Eritreans eat meat-free on fasting days, so dishes like Shiro and Misir Wot are classics, not an afterthought.
Buna · ቡና
Ethiopia is widely known as the birthplace of coffee. In Ethiopian and Eritrean homes, coffee is a ritual of hospitality: beans are roasted, brewed and shared with family and friends, one slow round at a time.
Green coffee beans are washed and roasted over a small flame until dark and fragrant, then passed around so everyone can enjoy the aroma.
The beans are ground and boiled in a jebena, a clay coffee pot, often with incense burning nearby.
Coffee is poured into small cups over three rounds: abol, tona and baraka, the last said to bring a blessing.
